Rava Set Dosa

Rava /Rave /Semolina is one of the grain which helps you to prepare some food quickly. Semolina is a wheat rava and it is healthy to use it.
I have prepared prepared set dosa with medium sized rava and urid dal. It is soft, fluffy, yummy and of course it is healthy.

Let us see some benefits of eating Rave/Rava/Sooji / Semolina
Rava / Semolina is a coarse  flour made from durum wheat. Rava is rich in protein and fiber. So rava is digested slowly and keeps you full for a long time. It has good amount of vitamins. Rava has good source of iron and magnesium. These minerals helps and support red blood cell production and blood sugar control. Rava /Semolina is good for weight loss, for good heart health.
Here steamed /cooked plain rava is added to ground urid dal. It is idli batter actually and I made use for Fluffy dosa/dose.
Let us see the recipe now :
Pressure cook Rava in a container and keep it aside to cool. ( No water to rava while cooking). You can use weight to cook Rava. It is just like you are cooking rice. But not to add water to rava. It should be dry.

Things Needed :

Urid dal : 1 Cup
Steamed Rava/Semolina : 2 Cups
Salt : As required

Method :

1. Soak urid dal for 2 to 3 hours and grind it with required water. (I have used grinder).
2. Take out the ground urid batter to a big bowl and add salt and steamed rava.
3. Mix it well and leave it for fermentation.
4. Next morning Mix the Rava dosa batter nicely. Add water if required. It should be idli batter consistency.
5. Keep tava /pan on the fire and heat.

6. Clean the pan with a clean kitchen tissue.
7. Sprinkle some oil and put a ladle of oil. Do not spread much.
8. Cover and cook on low flame.  Sprinkle 1/2 tsp of oil on the top. Turn the other side and cook.

9. Take it out from the pan and serve hot Rava Set Dosa with the side dish you have prepared.

10.We had it with Honey and pickle.

Note :

Rava should be cooked well to get good taste. No need to add any methi seeds or avalakki. We are using more Urid dal. Cook on medium and low flame. Adding ghee/ butter instead of oil to cook dosa is optional. It taste heavenly.
Time : Urid dal soaking time 3 Hours + Fermentation + Over Night + Dosa preparation 30 Minutes.
Serves : 4 to 5.
Grind a cup of Urid dal with required water and take it out to a big bowl.

How to cook/steam Plain dry rava....? 

1. Keep pressure cooker on the fire.
2. Put some water and place the cooker plate.
3. Keep a small bowl upside down.

 4. Put Rava in a clean dry bowl. Keep it on the bowl. (Which is already placed up side down). Cover with a clean plate.

 5. Close the lid and Keep cooker weight after it pushes the air out of the knob.

Cook for 8 to 10 minutes.
6. Open the lid and take out cooked rava and let it cool.

8. Add little water and mix it nicely. ( Once the rava cools down completely).
Add little water once the rava cools down.
9. Add rava mixture to ground urid batter and add salt. Mix it well and let it ferment over night or 5 to 6 hours.

Rava Urid Dal Dosa

Rava Urid dal dosa is god to have for breakfast, snack time or even dinner. It is easy and even you can prepare it with out fermentation.

 I have prepared dosa without fermenting the batter, adding little curd and prepared spicy dosa, as set dosa and even thin and crispy dosa. Varieties of dosas can be prepared with this Rava urid dal dosa batter.
Let us see some benefits of using Rava/rave/semolina in our diet. 
Rava/Sooji/Semolina is rich in calcium, phosphorus,  potassium, iron, zinc, carbohydrates and proteins. They do contain vitamins B and E. It helps to loose weight. It is filled with fiber and good for digestion and easy bowel movement. It is low in cholesterol and sodium and is called as balanced food. Rava is digested slowly and keeps you full for a long time. Rava is good for people who suffer from diabetics. They help in building strong immunity system in our body. They also good for healthy metabolism and healthy muscles, nerves and bones.
Let us see the recipe now:
As I said earlier you can prepare dosas immediately as soon as you grind, then ferment and then use the batter for set dosas, thin dosas and spicy dosas.

Ingredients :

Urid dal : 1 Cup
Rava : 3 to 3 1/2 Cups.
Salt : As required
Oil : 3 to 4 Tablespoons

Method : 

1.Wash and soak urid dal for 2 to 3 hours and then grind it with required water.

2. Remove it from the mixi jar to a big bowl.

3. Add a glass of water to rava and then mix it well. Add this wet rava to ground urid dal batter.
4. Add salt and mix it well.
5. Let it ferment for over night or 6 to 7 hours.

6. Keep a pan on the fire and heat. Put little on the tava and clean it with a kitchen tissue.

 7. Mix the ferment batter nicely and take a ladle of dosa batter and spread it on hot tava in a circle shape. (Let the flame be low while spreading dosa batter).

 8. Cover and cook for a minute. Sprinkle little oil on the top. Turn the other side and cook for 10 seconds.

9. Remove dosa from the pan and serve hot dosa with curry /chutney/pickle.

10.Repeat the same with remaining batter.

Note :

Do not make the batter very  watery. The consistency of the batter should be normal dosa batter consistency.

Preparing spicy dosa :

Wash and cut coriander leaves, curry leaves and green chilly to dosa batter and prepare thick /set dosas.
Dosa with out fermenting the batter.
Mix dosa batter nicely and prepare dosas as normal dosa.

Set Dosa..Who does not like it? It is soft, Its fluffy, it is simply super to have. Healthy to the core. I have prepared this "Set dosas " with same ingredients but added something while grinding and let it for fermentation and the wonderful dosa we prepared the next morning and it was just Wow.
I have used cucumber, urid dal, raw rice.

Let us see some benefits of eating Cucumber in our diet.
Cucumber is filled with nutrients. It is good for overall health. Cucumber is rich in Vitamin A, Vitamin C, Folic acid and it is rich in fiber. This vegetable is rich in minerals like magnesium, potassium and silica. Cucumber is very good for skin health and eye health. It helps to cool the body and mind. Cucumber is for preventing acidity and helps to keep our skin well toned. It helps to prevent constipation. Helps in managing diabetes. Lowers the blood pressure. Helps to reduce the risk of kidney stone. Keeps our body functioning well.

You can prepare dosas with same dosa batter in different ways, like fluffy dosa ( set dosa), crispy dosa and soft dosa) as above shown in the picture.

Lets see the recipe now :

Ingredients :

Raw Rice : 2 Cups
Urid Dal : 1/2 Cup
Methi Seeds/Fenugirk Seeds : 1 Teaspoon
Avalakki/Poha/Aval/Flattened rice : 2 Handful
Cucumber : 1 Medium size
Salt : As required
Oil /Ghee : 3 to 4 Tablespoons.

Method : 

1. Wash and soak rice, urid dal, methi seeds together for 2 to 3 hours. Soak Avalakki separately.
2. Wash and remove the outer layer of cucumber and grind it with all the ingredients.

3. Use very little water to grind. (Cucumber helps to grind the ingredients).
4. Put the ground batter to a big bowl and add salt. Mix it well and let it rest for fermenting.
5. It should be fermented well to get good fluffy dosas. ( Over night or 6 to 7 hours).

6. Mix the batter well. Add water if require and it is ready to prepare dosas.
7. Keep a pan/dosa pan on the fire and heat. Sprinkle some oil and clean it with a kitchen tissue.
8. Take a ladle full of batter and just put it and spread it. ( It should not be pressed while spreading).
9. Add little oil/ghee on the top, cover and cook for a minute on medium flame.

10. Remove the cover and turn the other side of dosa and cook for 10 to 20 seconds.
11. Repeat the same with remaining batter and prepare dosas.

12. Set dosas are ready to serve. Serve with your choice of side dish.

Note :

Removing the outer layer of cucumber is optional. The batter should be fermented well to get good fluffy dosas. Adding ghee is optional. Do not make the batter too watery while grinding.
I have not added the cucumber with its cover. Wash it well and dip in plain water for at least 20 minutes before using the cucumber.
Do not add any cooking soda or any other substance like Eno.
Time : Soaking Time : Rice 3 Hours , 
Grinding : 10 minutes in Mixi jar/ 30 minutes or little more in Grinder. (Grate the cucumber and then add cucumber while grinding rice).
Fermenting the batter : 6 to 8 hours /Over Night.
Preparing Dosas : 30 Minutes.
Serves :  5 to 6 . (According to size ).
South Canara Recipe : India : Karnataka : Udupi.

Dosa turns green when add cucumber without removing the outer layer.  (Green dosa).
